8 minute healthy meal: Balsamic turkey strawberry salad sandwiches

It is a busy weeknight and you don't know what to make- what now? Make a sandwich! Bread is not the enemy- with a bigger nutrient punch than calorie punch, we can rest assure it is a healthy component of balanced diet. Grain foods provide vital nutrients that many Americans are lacking, like iron, folate, and niacin, to name a few. I love whole grain breads for their source of fiber - important for digestion, blood sugar control and weight management. Did you know fiber promotes early and prolonged satiety which can help you avoid overeating? It is recommended that we eat 25-35 grams of fiber per day, but I recommend aiming for the higher end of that range to reap the full benefits. This salad was so tasty and so easy. My family and I made several large batches for this segment and ate it all within a few days because we could not get enough! The recipe is from the Grain Foods Foundation.

Ingredients
1 tbsp. balsamic vinegar
2 tbsp. plain greek yogurt 2% or light mayo
4 oz. skinless reduced sodium deli turkey breast breast or roasted turkey breast chopped (can sub chicken)
1/2 cup chopped fresh strawberries
2 green onions sliced (about 1/4 cup)
2 tbsp. chopped pecans
4 slices 100% Whole Wheat Bread
2 romaine lettuce leaves

Directions
Stir the vinegar and mayonnaise in a medium bowl until the mixture is smooth. Add the turkey, strawberries, onion and pecans and toss to coat. Cover and refrigerate for 30 minutes.
Divide the turkey mixture evenly between 2 bread slices. Top with the lettuce and remaining bread slices.
